Note: this collection of recipes are meant to follow the general rules of the fasting by the Eastern Orthodox Church. It does not contain the strictest interpretation of said requirements but will be largly following the "letter of the law." I plan on someday compiling them in from strictest to loosest fasting recipes but that takes a lot of time. This list is for Orthodoxs Chirstians in the U.S. South that wish to follow fasting and still enjoy their culture. My mission is to find recipies that help Southern Orthodox Christians during fasting. Unfortunetly, a lot of food in the South usually contain meat or dairy.
Appalachia Macaroni and Tomatoes is simple and humble mountain food. The original recipe is simply macaroni, tomato juice, bacon grease, sugar, salt and pepper. This one supplement bacon grease with tahini
Hot Pasta Water: The hot pasta water is simply the water that the macaroni is boiling in – see Step 1. You are pulling out 1 1/2 cups and setting it aside. The recipe calls for 3/4 cup of hot pasta water; however, when the dish is finished, you may wish to add more water if you desire more broth.
Add 1 can of tomato chunks per 2 cups
Tahini: The tahini adds a tiny bit of fat and is used to balance the flavors.
Ingredients
7 cups sliced cucumbers
salt as needed
1 cup thinly sliced onions
1 cup sliced green bell pepper (Optional)
Dressing:
2 cups white sugar
1 cup white vinegar
1 tablespoon celery seed (Optional)
2 teaspoons salt, or to taste
Place cucumbers in a colander and liberally sprinkle with salt. Set aside until water starts to release from cucumbers, about 15 minutes. Drain and rinse cucumbers. Cut the ingredients
To make the dressing: Whisk sugar, vinegar, celery seed, and salt together in a medium bowl until smooth.
Pour dressing over cucumber mixture; stir until evenly coated.
3 sisters soup ingredients
avocado oil
garlic
onion
chicken broth ~ or veggie broth
fire roasted tomatoes, canned
red potatoes ~ sweet potatoes would also be nice
zucchini and/or summer squash
corn ~ while you could use frozen, I would urge you to slice the kernels off fresh ears, it really makes a difference
black-eyed peas ~ either canned or dried
jalapeño ~ makes things pop
chipotle powder adds a nice smokey heat
bay leaf ~ I never make soup without it
cumin
salt and pepper
